Dating back to Antibellum times when a young lady sent a doting Civil War captain a batch of her treats for his birthday, Tennessee T-Cakes are still made from the same family recipe. The couple married upon the captain's release from the war.

Divorced and with four children to feed, Barkley's entrepreneurial spirit kicked in. She took half of the house settlement and opened a business. Neither cupcake, candy or cookie, a T-Cake is a confection. The Food Network's Deen Brothers showcased it on their series, and Oprah Winfrey voted it one of the four best cakes in the country in 2006, exposure that caused sales to explode. Barkley has come a long way from driving a cargo van across the South to sell T-Cakes at Christmas fairs. Already in Whole Foods stores, Barkley had, at press time, moved into 169 Kroger stores.
